I normally get fresh salsa from the nearby Mexican Markets, but the shelf life is only 3-5 days for the fresh stuff.

So I developed an obsession for it.

Cholula is good too.

Funny story: A friend of mine and I were touring an extremely remote, rural part of Mexico for some research I was doing. Anyway, we went into a restaurant and there was flippin' McIlhenny's Tabasco on the table (plus ketchup for pizza, wtf?)
I couldn't believe it. Tabasco is way too salty.

The best Imo is the chipotle, the chili garlic is really good also.

A really good, very hot sauce is Gunslinger.

Best salsa Imo is Herdez salsa casera, it's a fresca style so the hot is not really hot.

on oysters and crackers. loved it. now i put it on chili, cheese crisps. i have gone thru almost a whole bottle in four months. in the past it sat on the shelf for years, lol.

I doused it in that brand like my friend said and gagged on the texture and flavor of the oyster ever since everytime I see it on a shelf I think about that

I'm digging the Chipotle Tabasco



Smokey and great flavor.

For hot stuff I go to my local Tijuana Flats and visit their hot sauce bar - a rotating array of everything from sweet chili to ridiculous ghost peppers. About 25~30 sauces available - graded from smiley face to plain face to frowny face to Xs for eyes (He daid, Jim!). I can't do the x eyes but there's some really good ones in the plain to frowny range.

Lately my favorite has been Swamp Scum

because I don't really like regular Tabasco - nothing against it but I usually have a choice between that and Louisiana or Crystal and I like both of those much better. But the Chipotle one was on the table at a lunch place so I gave it a shot and glad I did.

Swamps scum is sweet and smokey and not too hot either...the place I get it puts fresh jalapenos on all their food though so that adds the kick to make it just about perfect.

combining Habanero's Witches finger (long hots) and jalapeño on top of onion and heavy garlic and green pepper base with lots of cumin, then diced, paste and crushed tomatoes...

Hmmmm.....

The pureed hot peppers and olive oil make a delicious paste. I like a chicken or lamb couscous like my cousin makes. His long-time girlfriend (unfortunately who died) was a 'pied noir' from Algeria who gave him the recipe. I also like a strong Algerian wine that's perfect with the ultra-spicy couscous like Sidi Brahim.

But there's a local one called Hell Sobrante that, while not extreme by any means, has a great flavor to it. I need to track down another bottle.
