just had two cups of red wine. heading out for sushi in about 45 minutes. should I have a giant can of Sapporo reserve there? or will I barf?

I don't think you will have any issues. But for me I don't get into barf territory till well after 2 bottles of wine or the equivalent.

5. I have no trouble in either direction with those two - until total quantity

hits an extreme. I think the real issue with starting liquor after beer is that you're already a little tipsy, and thus more likely to binge to excess once you move to something with a higher alcohol content. But if the total number of alcohol units is reasonable, I don't really think the order or the type matters...
