I am so annoyed at the moment. A relative has been having a rough time with a recently released from the hospital boyfriend so I decided to do a good deed: provide two easy meals. I am a good cook, and I know she is stressed. Arrangements were made to meet her near her work for the handoff, and I double checked ingredients for preferences (but didn't reveal the meals in advance).

Spent a little more than planned while shopping, but smiled the whole time.

Meal 1: beef mostacolli with homemade red sauce and three different cheeses for topping; Italian salad and chocolate pudding with fresh berries for garnishing - all designed to be on the table with minimal effort.

Meal 2: pot roast, redskin potatoes, carrots and onions (all prepped for the crockpot) with chocolate chunk cookies for dessert.

My thoughts were "mostacolli meal for tonight, crockpot pot roast for tomorrow, leftovers for a couple of days until the weekend." I got up early to make the sauce (the house smells great at the moment) and...

At quarter to eight she sent me a text that she can't meet today. Tomorrow doesn't work for my existing obligations, and (since she is now working from home) she is an hour in the opposite direction of where I arranged my schedule to meet up with her.

Groceries: $50
Time Spent So Far: 4 hours

do not like "red sauce" even on pizza. (The sacrilege is obvious to me - lol!) I had made "extra" for myself already.

I will save the pot roast until Thursday night (crockpot) for a nice "welcome home Friday" meal. (Still trying to decide if it needs to hit the freezer?)

The mostacolli and salad fixings just found a nice home. (

Chocolate pudding/fresh berries and cookies will NOT be a problem.

4. Is the pot roast already cooked?

If it is uncooked and thawed, you have to cook it before re-freezing. If already cooked, I would freeze the meat at least. The veggies should be OK.

7. It is raw, but seasoned and in a ziplock for "toss into crockpot".

I think if I put it in the coldest part of the refrigerator, it should be okay? The potatoes and carrots should be fine until Thursday.

I will have to find a use for the cut up onions - maybe some nice soup? Croutons and beef broth, with some of the extra yummy cheeses...the kids can have nuggets since I know they won't eat it! Lol!

This will work out, but it will be a while before I go to this much effort for her again.

She is young. Sigh.

The timing with my husband (the pot roast fan/I hate it) being out of town, plus super early red sauce effort (kids don't like red sauce - sacrilege!) just was...Really Annoying.

No good deed...sigh.

Won't do that again!

I found a home for the extra mostacolli and salad - it being a Tuesday night, the first people I called were already booked (which was why I was thinking "post on Facebook - someone will come" ...

Which, as a mature grown up, I *know* would be all passive aggressive since she didn't even ASK what I was bringing to her.

Did I mention chocolate chunk cookie and chocolate pudding with fresh berries? Sniff.
