Apple juice is clear and very filtered. You can but it as frozen-concentrate. Apple cider is not completely clear and less filtered. To me, cider has a smoother flavor.

Cider will naturally get "hard" over time if it's put into conditions allowing it to ferment. It will ferment if it's kept in the fridge long enough, becoming fizzy and very slightly alcoholic. The old New England trick used to be to leave hard cider outdoors on a really cold night and pour off the liquid the next morning, the original "applejack." Now it's distilled into more of a brandy.
You can ferment even Pasteurized apple juice, but you need to keep it sterile and add a decent wine yeast. The filtering process eliminates the natural yeasts along with the pulp and Pasteurization kills off any that manage to get through the filter so the bottles don't explode in the supermarket.
So those are the US distinctions between the two.

(15,388 posts)It really bothered me that I didn't know. I could enjoy a sauce, but it would nag at me that I couldn't tell if it were bold or not. I love authentic Mexican food so spicy never was a problem for me, but bold flummoxed me until I was hired to twist balloons at a bbq competition here in Kansas City. After my time was up, I was on a tram back to the parking areas with a bunch of judges, and I made them tell me what it meant.
Just a marketing term. Depressing.

(111,329 posts)I don't like the average tomato/vinegar US BBQ sauce, not even the supposedly good ones at BBQ restaurants. I use either a light French sauce from Julia Child or if I want to knock my socks off with flavor, a Sichuan one that's just full of hot chiles. I make both at home and use them up quickly, they are not good keepers.
Tomatoes and vinegar are in neither and my stomach is happy about that.

(15,388 posts)That makes some unique flavors including some sweet ones made with raspberries that still have a little bit of spiciness to them. I like the really hot stuff too, but only if it's done right which is hard to do since the heat often obliterates any taste, but I'm not any kind of sauce-maker who could come up with something like that.

The apples go into both machines, but the apple juice machine makes only apple juice, and the apple cider machine makes only apple cider.
That's the only answer I was ever able to discover. In the interests of preserving my sanity, I dropped the question.

(22,898 posts)Apple juice and apple cider are both fruit beverages made from apples, but there is a difference between the two. Fresh cider is raw apple juice that has not undergone a filtration process to remove coarse particles of pulp or sediment. It takes about one third of a bushel to make a gallon of cider.
For me, I always thought juice was sweeter than cider but I confess I haven't a clue. I think the only difference is the labelling.
