Restaurants in the South do it all of the time.

Pepper vinegar is considered an essential condiment for collard greens.

Just stick a knife in the peppers a few times after you do. It allows them to release more flavor

in the vinegar with a little sea salt - dry them and sprinkle them on salads and baked potatoes or anything else. They look really pretty stored in a glass jar.

Had a bunch of celery and couldn't think of what to do with it. Tried Gorden Ramsey's Pickled Celery (below link) and everyone raved about it, even my son who hates anything pickled.




Hint: The fresher and crisper the celery is the better AND run a peeler over them to remove the tough ribbon veins on the outside AND the inner stalks which are more tender are the best. Do not pickle the leaves of the celery.
