What's for Dinner ~ Thursday May 24th?

I had a couple of white chocolate truffles and a bunch of sleep for dinner last night, so I am going to try and be a bit healthier tonight!

No idea WHAT though....Bill is working, so it's just going to be me....Maybe some nice roasted veggies!

for The Eagle Project, a new theatre company whose mission is to explore our American heritage through our Native American roots. We are meeting at a bar/restaurant in Manhattan, doing poetry and standup comedy. I hope they have good food there! I fried 15 lbs. of chicken yesterday for tomorrow's picnic for the same company. So for me, it's going to be either eating out or fried chicken for days.

I made a lot because the director of my reading has a HUGE appetite--but the, he's a very big man! If he doesn't eat 5# by himself I'll be surprised! Even if he does, I will still need help polishing it all off by myself.

they each got down a little soup last night. I had planned a roast for today but I think I may be the only one who can eat. I guess there's nothing wrong with that! Or is it mean?

4. really yummy homemade pizza

no sauce. really easy. make your favorite pizza dough, put in pan. cover dough with mozzarella, sliced thin or shredded. Slice tomatoes and put them in slightly overlapping concentric rings. Sea salt and freshly ground pepper, sprinkle with freshly grated parmesan, drizzle with a bit of olive oil. Bake for 15 or 20 minutes in a screaming hot oven. chopped fresh basil on top when out of the oven.

I know it doesn't sound like much but it's fantastic. Great balance of flavors.

but what is with sea salt? Isn't salt NaCl, Sodium Chloride, whether it comes from the ground or is left over after sea water evaporates? It is always touted as if it were healthier than bad old regular salt. It's the sodium that is bad for you, as in high blood pressure.
I've gotten used to 'light salt' which is half sodium chloride and half potassium chloride, and only use that on certain foods that are too bland without it.

It's touted as a flavor thing and even then it's often not distinguishable from regular salt. I don't worry about salt intake for a couple of reasons: 1) I don't have high blood pressure and 2) I don't eat much processed food.

I have noticed several items, like Planter's peanuts, that put their "heart healthy' stamp (which nuts generally are) right next to their "Now with Sea Salt!" stamp to give you the impression that you're eating 'good' salt.
Campbells Soups also promotes themselves as healthy food, but one can of tomato soup has 60% of your daily sodium allowance. You have to look carefully, because they list the serving size so one can is 2 1/2 servings, so a quick glance at the nutritional label looks like it's only 25%.
Bottom line: your avoidance of processed foods is the best way to eat healthy.

I have mentioned this before on this thread, but try AlsoSalt.

At the time I mentioned it, though, I hadn't had any experience with it. Now that I've had it around a couple of weeks, I think it's a very good alternative to sodium.

The funny thing is, though, that I've gotten used to food without salt and so I really don't even use the AlsoSalt much.

I had to get it by mail order.

I change up the cheese sometimes (used Jarlsberg last week) and add some things at other times (bacon, arugula, caramelized onions).

with mushrooms and those little sweet peppers. And steak fries. We have two things to celebrate today: my husband and I got married 26 years ago today, and our 18 year old son had his last day of high school today.

I'm really taking advantage of being in port (here longer than we anticipated due to needed repairs). I can get fresh produce and other supplies every day if I need to.

Really exploring some new recipes and loving it.

White chocolate truffles!! Yum.

Salad with chipotle dressing.

I didn't dine very creatively today, but the other days this week were fantastic because my husband cooked and can he ever cook! Lots of good leftovers to see me through the weekend.

Tomorrow, though, I am going to make a couple types of soup:

tomato

leek potato

Also today I made another big pitcher of lemon balm tea. Do I ever love that stuff! It's so calming. The lemon balm grows all over my property and what I do is cut it, wash it, and put it in a crock pot for a few hours. I turn off the crockpot and then the next day, squeeze the leaves and chill the tea. Sometimes I mix it with ginger-lemon tea.

We're having a big family and friend cookout on Sunday so I was cooking and prepping for it all morning. After my doc's appoinment this afternoon I picked up some freshly made Italian hoagies from the local sandwich joint for supper. They're the best hoagies in town and we enjoyed them.
