1. For his graduation dinner

my 18 year old son wanted tacos from the taco truck, LOTS of my potato salad, and key lime pie. So that's what he's getting.

He's going to the University of Iowa this fall and plans on majoring in political science. See what happens when you drag your kids with you to hear the presidential candidates and other politicians at an early age? One of my favorite memories is from when he was 11 (not so tall as now!) and seeing John Kerry with his hands on David's shoulders, talking to him.

Exciting times for him! And for all these kids graduating. I didn't go to college until I was quite a bit older...but it was a great experience once I finally got there!
Bill's son isn't really sure what he wants to do yet. We keep telling him to just explore and find what he loves.

I hope your son enjoys UI!
It always makes me happy to hear that kids of DU'ers have a love of politics.
We need them!

drawn to jobs in the meat packing plants. The taco truck operates next to a Mercadito, and does a pretty good business, except in the depths of winter. The tacos are really good, even Grandma enjoyed them. My husband had a gringa, con lengua (like a large taco, with tongue meat, the rest of us had tacos con asada.

and fried cod for the T-man with ff. Madster is out with her dad for fireworks tonight. I'm having mine with some wilted spinach and brown rice.

Grilled tofu and grilled sweet potato and red pepper salad. For dessert, grilled grapefruit. I had a block of tofu, and I decided to do something different with it. I had a packet of McCormick's "Luau" marinade, so I marinaded the tofu in that. Next time, I will use pineapple juice instead of the vinegar. I learned a new trick regarding marinading tofu. If you drain it and freeze it overnight, it's easier to squeeze out all of the liquid. And, then it sucks up marinade like a sponge. It's really good grilled.

It was yummy! I suspect the leftovers will be even better tomorrow.

I haven't eaten the grapefruit yet, so I don't know how good it will be.

OMG11delicious! Snipped some fresh chives onto the top before serving. Also had steamed snow peas, Quorn chik'n cutlets with feta-dill yogurt sauce and a green salad.
