Re-visiting my turkey enchiladas tonight. I'll have one of them with chopped cherry tomatoes, cilantro, shredded cheddar cheese, chopped lettuce, and onion. Avocado, too.
For a salad, sliced cucumbers in dill with sour cream.
My delicata squash rounds last night were very good and I still have some hollowed out rounds I can try new fillings with. The Italian sausage ones were terrific, though. For that stuffing, I used tomato paste, a small can of tomato sauce, chopped onion, and green pepper.
I found, however, that cooking the rings in the microwave takes at least 30" on high. Even then they were a bit crunchy, but I'd left the skin on since I grew the squash and knew it was grown organically. Just chalked it up to "great fiber!"
If I try a new filling, it might be ricotta with herbs sprinkled with parmesan.
For dessert, half a toasted lemon poppyseed muffin with blueberries and yogurt. I'll toast the muffin in the air fryer. Iced Earl Grey.
It's cooler here today, by a whole 10 degrees! That counts for something.

(14,889 posts)I've made this using gluten free crust (store bought) for guests that could not tolerate gluten, and it still tasted yummy.
Everyone I give this recipe to loves it. Is great as leftovers too.

(1,109 posts)That looks so good. I sincerely hope you don't mind if I slip in there and carve out a single slice for my lunch this day.
I especially like those bits of goodness within the dish and those crispity-crunchity flakes on the range just there.

(38,559 posts)I had been saving a package of sirloin tips for my birthday (later this week), but when sis and I went shopping for Dad's groceries this morning, she bought a couple of lobsters (as an early b-day present) for Al and I to have (they were on sale).
We'll start w/ the steak tips and a salad (butter lettuce mix, grape tomatoes, carrot, cucumber, radishes, yellow peppers and Vidalia onion).
While we're enjoying that, the lobsters will be cooking.
I didn't plan on any dessert. It's just too hot to bake. Something tells me we won't have room for it anyway.

(38,559 posts)I'll tell you what though: I can't remember the last time I had lobster, and it was delicious and a real treat. However... the steak tips were what really made this meal. They marinated for a few hours before hitting the grill. I managed to cook them to perfection. I had them on the plate next to my salad, which I dressed w/ blue cheese salad dressing.
I took one bite of steak and found myself "chair dancing." They were medium rare, but maybe just a little closer to rare than most people would like (which to me is perfect), with a wonderful char on the outside.
I'm getting pretty good on the grill. That's usually my sister's domain, but I'm beginning to think I could give her a run for her money.

(22,037 posts)We had a salad comprised of slices of celery, halves of homegrown cherry tomatoes and minced red onion with a Balsamic dressing.
Gnocchi with a deliciously thick tomato & basil sauce with garlic bread and Chianti.
Dark chocolate as we watched an archeology documentary.

I did beets and kohlrabi three ways!
Roasted roots, root slaw and sautéed greens.
Omg! All three are fantastic! Even if I am saying it.
Mr Alaska is doing the tri tip. Its almost done.
I have mine portions done and am tasting a lot!
Its gonna be memorable!
