Greek salad. Yum, I am so excited because (again), I get to use items from my garden: tomatoes, cucumbers, green bell peppers, scallions, mint leaves.
Not from the garden, of course, is feta cheese, chopped romaine, red leaf, and kalamata olives.
Homemade vinaigrette using white balsamic, oregano, olive oil, etc. Made this a day ago so the flavors have had time to blend.
To go with the salad and for crunch, a few wheat crackers with chive-flavored "butter" (olive oil butter).
A couple slices of cold turkey breast on the side. Bought this already roasted because of not wanting to heat up the kitchen.
I might use some sort of sauce on this, but at this point I'm not sure which one. Maybe just mayo mixed with some herbs, but I also have ginger sesame.
Dessert: iced coffee and 3 mango mochis.

(11,915 posts)It's a easy cheater meal, but it looks pretty and we had my son's GF over for dinner last night. I had that with broccoli and Key Lime pie for dessert. We're doing the same thing tonight.

(68,576 posts)pasta with asparagus and spinach...made in the Carbonara way with egg yolks and fresh Parmigiana and water from the Pasta...We have watermelon and strawberries with whipped cream for dessert. Herbal tea for me as I have to drink less coffee since I have A-fib...sigh.

(22,767 posts)Roasting a chicken is what I should have done today, but didn't plan ahead enough to take it out of the freezer in time. Going to be back in the high 90s again soon, so still going to have to wait.

(22,767 posts)Italian bread sliced horizontally, buttered and sprinkled with garlic powder. Sliced provolone cheese on both sides. Hard salami, black forest ham (wish it was hot capicola) and deli sliced pepperoni on the bottom, banana pepper rings on the top. Toasted open-face until crispy, then green leaf lettuce, garden tomatoes and chopped red onion tossed in homemade balsamic vinaigrette added. Just like mom used to make.
Fresh corn steamed and cut from the cob. We definitely eat more corn on the cob since I came across this last year:

I can't get over how much easier this has been from the way I used to make it. Most all the silk stays in the husks instead of being a nuisance. The other step I take not mentioned in the instructions is to wrap each ear in paper towel and wet it well before putting in the microwave to steam. As long as it's a good ear of corn to start with, it comes out sweet and tender.

(9,971 posts)'cause it's Friday, and anyway I'm dead from working literally all day at the shelter. The boss of stray cats is sick so I was the de facto boss today with help from the boss of adoptables and the boss of barn cats and small mammals. Since we all pitch in and do it together it wasn't too bad but lordy I am tired.

(35,675 posts)get it on sale. Tends to be a little pricey if not, however. Fortunately it goes on sale regularly.
A good substitute, IMO, is TJ's lobster raviolis. Never disappointed.
Aldi's pasta, OTOH, doesn't measure up.

Will look for Rana's on sale @ my grocery store.

(1,537 posts)Marinated in Red Hot and Sweet Chili sauce. Box rice and frozen veggies to accompany.

(3,215 posts)I halved a half-block of tempeh along its edge, making two thin slices, brushed the halves with extra-virgin olive oil and put it in my air fryer at 400 degrees for 20 minutes.
Prepared 10 patty pan squash, one homegrown holy mole (MOW-lay) pepper, 1/4 quarter of a green bell pepper and 1/4 red onion. I halved everything and brushed the pieces with olive oil. At 12 minutes I flipped the tempeh slices and added the other ingredients. Everything was done before the 20 minutes were up. Topped with chopped fresh parsley, also homegrown.
Dessert: thawed blueberries, raspberries and blackberries with a little plain yogurt.
The plants are growing so well this summer! Anyone want some homegrown peppers? I've got too many jalapeños, habaneros and holy mole to use. I might freeze some.
That's my kind of salad, NJCher! Garden fresh is the best!

(10,136 posts)It's our turn to bring dinner for the irregularly scheduled gaming group, so it was chili, with ground beef, tomatoes, several kinds of fresh peppers and 2 different dried ones. Unfortunately, one of our group hates cilantro, and it really needed it.
