South Germany's mac and cheese for dinner. It is really easy since I can start with premade Späztle.
I make the version which incorporates a little speck.
Had it for dinner with a salad and a side of green beans.

(2,026 posts)A German restaurant near my first office made it, and often served it out of their fast food takeout annex that was open just at lunch. It was cheap and wonderful, worth the several block walk. I recently went back to that city, and they still had it. I realized thats my homemade Mac n cheese recipe that Ive tinkered with for years basically matched that. I hadnt realized how much that specific dish had influenced my cooking.

(10,168 posts)Kasespaetzle sounds good now that the weather's getting cooler, but I'm not good at the spaetzle part. So I'll have to stick with macaroni and cheese. And a speck of speck is always a good thing!

(10,168 posts)I don't get there often since I don't each much meat, but they still have an impressive selection, albeit pricey. They have a lot of other German foods as well, so I'll look for spaetzl the next time I'm there. Thanks!

(3,650 posts)Certain US products are hard to come by here without a stiff markup. Some of that might be tariff related. Also the smaller shipments for niche goods.
There used to be a German baker on San Antonio just down from Hel Camino, by a beer supply store. They might be a source of information if still around.
