What's for Dinner, Fri., Sept. 30, 2022

I'm having sesame-crusted swordfish with my Japanese eggplant that I made yesterday.

The miso glaze of the eggplant conflicted with the salmon I intended to have it with last night, so I didn't complete that meal. I knew I'd made a mistake and I put too much work into it to be unhappy with it. Today I went out and got another cut of swordfish from WF.

So instead I used the salmon on a salad last night.

The RG can do all this in his head but I'm not as gifted as he is with cooking. In other words, he can taste in his head, but I can't.

Small tossed salad. Caesar dressing.

Pineapple kombucha.

Dessert: at WF I picked up a toffee chocolate bar and some yogurt covered almonds. A little of that with a cup of decaf coffee.

of leftover chili with pork rinds for crackers. Tomorrow night we're headed to our friends yearly wiener roast and their daughter always makes a big pot of chili too. Her chili I will skip, it always gives me heartburn anyways.

Husband thinks it's really good, I feel like it's just okay, a tad underwhelming. As I was tasting, I kept thinking it needs something more, but couldn't figure out what it was. I even added about 1/3 c of grated cheese (used shredded parm in the recipe.) When we were eating, I decided a splash of fresh lemon would really perk it up. Sadly, I don't have any at the moment.

Served with wide egg noodles (which I cooked not quite al dente and added to the slow cooker along with chunks of baby bellas); and green salad with lettuce and tomatoes from the garden (husband has second round of lettuce going) with balsamic vinaigrette.

I'm sipping a bonus mocha with the even more extra special bonus of a few dashes of Frangelico that's been in the cupboard since I made tiramisu during the winter holidays.

8. Wagyu beef stir fry

With sugar snap peas, mushrooms, carrots, sprouts and bamboo shoots over edamame mung bean noodles (low carb). We were going to have it over barley-lentil, but my husband wanted noodles, so change of pace.

Iced tea for the drink.

Don't need anything else with it.
