But each family is going to have their own version.

Butter.
1 large onion chopped

fry in butter till soft then add

2 carrots shredded
4 celery ribs chopped
1 cabbage quarter core chopped

cook till cabbage is soft

Add 4 cups water and

2 potatoes peeled and chopped
2 tomatoes chopped
1 bay leaf
whole pepper corns.

bring to a boil then reduce to a simmer till potatoes are done.

Serve with sour cream and dill weed.

This is basically stone soup. You can add whatever you want.

Of the ingredients and flavor profile involved. There are a ton of cabbage soups out there, and they are not all the same.

Regional differences play a huge part, as does, well, simple taste. My grandmother's soups were different from her in-law's soups, and they all came from the same region of Eastern European. Yet all different.
