(57,073 posts)Weird place here (TN).
I've been thinking about making stuffed cabbage soup & tossing in some kidnet beans just for something a bit different.

Ty for the suggestion, though!

(20,268 posts)Although kidney beans wouldn't break down as the others.
Did you say you were adding some sausage or meat?

(57,073 posts)Have you ever had stuffed cabbage soup?
Brown meat, with onions & garlic.
Add large can crushed tomatoes & small can diced tomatoes.
Cut up a head of cabbage & toss in pot.
Cook till cabbage is tender.
Some folks toss in some cooked rice, but I'm carb restricted (along with fat & sugar so no rice for me. Lol)
Yummy, quick, easy & relatively inexpensive. 👍
On edit: 32 oz fat free beef broth (Aldi has this.).

(20,268 posts)I read a recipe earlier. The taste of stuffed cabbage without the prep. Noice!
Now Imma gonna be needing to make it soon! Nippy weather is starting.

(57,073 posts)This is what I've been contemplating adding some beans to.
Seems I've developed a bit of an iron deficiency since swearing off beef & pork & beans are loaded (plus great for cholesterol, etc.).
Not sure which beans would be best in the soup though.
Thoughts? Tyia!

(1,739 posts)I made this a few days ago, and the two jars I froze for later are already gone. Its so easy and scrumptious. Perfect comfort food. It occurred to me that beans would be good in it too.
