(22,144 posts)Honey-Cornmeal Biscuits. It was supposed to rain today, but it is as sunny as can be and in the 70's. Oh well, it's what I planned to have, so we will have it .

3 T. brown sugar
1 t. canola oil
1/4 t. salt
10 oz. pgk coleslaw
2 c. chopped apple
1/2 c. raisins
Combine the vinegar, sugar, oil and salt in a bowl and microwave for one minute.
Add all the other ingredients and toss well to coat. Serve chilled or at room temperature.
It's really a unique taste .

love the recipes for the soup and the biscuits too, if not too much trouble !
1 c. baby carrots, halved
1 c. chopped onion
2 garlic cloves, minced
7 oz. turkey kielbassa, halved lengthwise and cut into 1/2" pieces
4 c. fat free chicken broth
1/2 t. dried Italian seasoning
1/2 t. black pepper
2 (15.8 oz. cans) Great Northern beans,drain and rinse
1 (6 oz.) bag fresh baby spinach leaves
Coat a large saucepan with cooking spray and heat over medium high heat. Add carrots, onion, garlic and kielbassa and saute for 3 minutes, stirring occasionally. Reduce heat to medium and cook 5 minutes. Add the broth, seasoning, pepper and beans. Bring to a boil; reduce heat and simmer for 5 minutes.
Place 2 c. of soup in a food processor or blender and process until smooth. Return pureed mixture to the sauce pan and simmer for 5 minutes. Remove soup from the heat and add the spinach stirring until the spinach wilts.
Yields 5 servings (1 1/2 c. each)
I am a vegetarian, so I don't use the kielbassa and I sub with vegetable broth. It's a quick recipe.
Honey Cornmeal Biscuits
1 3/4 c. Bisquick Baking mix
1/2 c. yellow cornmeal
1/c c. milk
2 T. honey
Heat oven to 450 F.
Mix all ingredients until dough forms and beat for 30 seconds. Turn dough onto a surface dusted with baking mix and gently roll the dough to coat. Shape into a ball and knead 10 times. Roll into 1/2" thick. Cut with a 2" cutter dipped in baking mix.
Bake on an ungreased cookie sheet until golden brown for 8-10 minutes. Can serve with honey or mix up some honey butter.
Makes 12 biscuits. However, I only have a 3" cutter and it made 7 biscuits.
I can't wait to make both recipes!
I usually make soups in the winter but this looks too good to wait and esp with the biscuits!

(22,144 posts)the soup . The flavor is really good but I was just wondering if when you make it is your soup is very thick? Mine wasn't thick at all. I didn't get to make the biscuits because I forgot to buy the cornmeal!!! Grr But I had some crackers and still enjoyed it.

(22,144 posts)so mine is not thick. Did you puree any of it? I guess since there is no roux called for, there is nothing in there to thicken it. You could make a roux next time and see if that helps . I have been on a low fat diet; hence all of the Cooking Light recipes I have been using.....butter and oil is off limits, so no roux .
purée a little bit. I love the soup but was just wondering about the thickness. Even my picky son liked it lol. So I will be making it again this winter!

And I've got one potato that needs cooking. I'm thinking of a baked potato with the works.

Whip up some fresh corn tortillas and some chipotle coleslaw (though I didn't make as big a batch to save a bag of the cole slaw cabbage for the Country Apple Coleslaw). Probably my favorite meal.

(106,886 posts)Don't have egg noodles, so it's going over rotini. Going to par boil the beans then saute with garlic.

(9,791 posts)I'm shooting for easy stuff this week. We have a big end-of-summer cookout scheduled for Sunday and that means a lot of food prep for me. I also have a big bag of Cubanelles waiting in the fridge for me to clean them to freeze. The tomatoes are almost finished, thank goodness, but we still have plenty of them to eat.

(9,791 posts)We put six plants in the planting bed and they are producing like crazy. They're shaped like an Italianelle pepper but they're light green and have a thin skin. They're great for frying with onions for cheese steaks or sausage and pepper hoagies. I like to stuff them with a rice and ground beef mix and cook them in tomato sauce.
