What's for Dinner, Sun., March 31, 2024

I'm sure we will hear about many lovely spring menus today.

I'm making asparagus and ravioli in almond broth. The ravioli is stuffed: prosciutto and cheese.

In addition, a mustard greens salad, which is spicy by definition. Olive oil vinaigrette. This is an early crop in my garden. A pic of my mustard greens is below.

Which, speaking of gardens, I will be working at all three of my locations today instead of having a family dinner. That's because it is one of the few "leaf blower free" days you can get in a suburban location like mine.

Snow peas fresh from the garden! It's sort of become a modern tradition in this house.

Fresh cut asparagus here also. It'll go in a venison stew. So far it is just cubed front quarter with onions, garlic, Worchestershire, and Watkin's spice mix. After I'm done working in my garden I'll add dried veggies, rice, and quinoa. I despise leaf blowers. I use my thirty year old electric Toro in the Fall for my driveway and that's it for the year.

4. Ham and Potato Casserole

Mom brought me a ham yesterday. We portioned and vacuum sealed most of it away in the freezer but I kept some out for today.

Made a cheese sauce with cheddar and jack, sour cream, and the tiniest squirt of mustard. Sautéed diced onions and mushrooms in the leftover bacon grease from breakfast, then added spinach and a little garlic. Layered thinly sliced potatoes, diced ham, and the veggies with the cheese sauce. It’s in the oven now.

For dessert: Rainbow Sherbet. Yum!

5. Turkey...

I thawed out another chunk of the turkey I had at Christmas so I'm having that, some green beans, and cranberry sauce. I'd love to have stuffing but I'm still eating a pasta salad from Friday and that will be my carb.

I did make a quiche for breakfast. Surprised myself.

mashed potatoes and gravy, asparagus. Dessert is saffron cake with raisins, or carrot cake mini cupcakes.

Unless one especially seeks out local lamb (and has freezer space for a half lamb or so) most of the lamb here is Australian or from New Zealand. Which is dumb because we can certainly raise lamb in Iowa, but my butcher tells me that most Iowa lamb goes to the East coast.

At any rate it was good. We had a Hungarian Grüner Veltliner to drink. Maybe a bit light to go with roast lamb, but very pleasant.

We never made it here at home for St. Patrick's Day, so we made it today.
There were carrots too, obviously.
