What's for Dinner, Mon., April 15, 2024

Mango salad, artisan bread (toasted) with olive oil butter and Asian pear spread.



Has lime-soy dressing. Mango, sliced orange peppers, red onion, cilantro, mint, and basil. On top are toasted spicy chili-lime cashews. Ruffly green lettuce and romaine heart lettuce mixed in.

Kombucha: Home-brewed superberry.

Dessert: Maybe some ice cream later with a cookie. Decaf for sure, though.

It turned out to be a beautiful spring day in the Catskills. I’m grilling a swordfish steak and some vegetables.

The fish marinated in milk for about an hour then rinsed and coated with olive oil and garlic. I’ll grill it for about 2-3 minutes a side.

Speaking of sides, I’m going to grill a Portobello mushroom and some asparagus spears.

Tea and a bloodthirsty game of Scrabble for dessert.

I had fresh shiitake mushrooms rather then dried and I put some Napa cabbage in & I am out of Sichuan peppercorns, so I used red pepper flakes. Over jasmine rice

... with homemade pitas.

The pitas were semi-successful: they had a good texture, but the pockets didn't form properly.
Shawarma was as good as always.

(no pocket). I would just use it as a roll-up.

I've been thinking of making my own pitas, too.
