Challenge: the family is getting together the Saturday after Thanksgiving -

I'll be prepping most of the food and bringing it to be re-heated.

We'll have left over turkey, of course, but I'm open to other suggestions.

So what do I fix to make a festive meal that doesn't shout "LEFTOVERS!"

Extra points for vegetarian fare that isn't eggplant parmesan.

Some are calling it "Thanksgivukkah"!

It won't happen again for something like 70,000 years, so celebrate!

I might make a matzoh ball soup with the turkey broth.

(the slightly hot stuff, not nasty unripe sweet peppers). Use it for building your own tacos. Make some refried beans for the vegetarians.

you can always fancy it up with great garnishes, and salads and beautifully cut fruit can be done ahead of time. This is a lighter menu, but you can always go crazy on the desserts.

Whip your leftover sweet potatoes with butternut and acorn squash in a blender. Add some orange juice, a little brown sugar and butter. Bake in casserole with crushed pecans on top.
