This is a pretty short book and doesn't have a lot of specific instructions, but does have a lot of good information. It's a good time of year to do some cold smoking, so I think I'll have a go at making some lox sometime in the near future.

(7,638 posts)for my Masterbuilt electric smoker to do cold smoking. I read up on it before I started and it looked scary as hell. But the consensus seemed to say, invest in good equipment and you'll be fine. So now I make Kielbasa and occasionally some kind of fish if someone has done it before. It's actually good but a pain in the butt.

(36,827 posts)It's also flat on top. So all I have to do is build some kind of wooden or cardboard box to sit on top of my smoker to hold the salmon. I'll probably just use cardboard and see how well it works before I build anything out of wood.

(7,638 posts)I used to make my own, now I am old and lazy and tend to let Amazon make my tinkering toys. Ha. But I have seen some nice DIY setups.

(36,827 posts)I've never really seen a good retail home use cold smoker, but all I have to do is add an external smoke chamber to my existing smoker and I'll have one. I have a cold smoke plate which goes inside my smoker. It works fine for things like cheese, but it isn't able to cold smoke over long periods.
