Not sure what to call it, but it's been a favorite since I was a kid. Made in a Lodge cast iron pan.

Italian sausage, onions, peppers, mushrooms, garlic, and stewed tomatoes. Fold in cubed boiled potatoes. If you let it simmer enough, the spuds let off their starch, and thicken the tomato sauce.

Oh yeah, garlic bread is a must!

Ever tried a bit of cinnamon in tomato sauce? Doesn't take much but, I like what it adds.

Interesting... I usually associate cinnamon and tomatoes with eastern fare.

Hmmm... might have to try it and see!

Oh yeah, I do like one pot/skillet meals, too. Saves on washing dishes as well!

I did an interesting Mexican chicken recipe last night. I'm going to do some tacos with it tonight with chips and hummus. I know....but I love hummus!

jammed with leftover chicken breast, tomatoes, fresh herbs from the garden, shredded mozzarella and corn bread stuffing, topped with a chive blossom from the garden.

Baked long red sweet peppers sliced and stuffed with a tiny bit of cream cheese, salted and peppered.

and baked sweet potatoes.

Everybody make your own style. No meat. Frijoles refritos, olives, lettuce, cheddar, guacamole, green onion, fresh cilantro, lime, salsa verde, tortilla strips fried crispy, radishes, .............and rhubarb pie in the oven for dessert.

Love my farmers market.

Potatos? I'm having a Dan Quayle moment all of a sudden, on the pluralization of potato.

I also picked the first two strawberries of the season. Small, but ripe.

and just a garden salad. Both yummy though.





Citrus Marinade
Marinate chicken at least 2 hours or overnight; shrimp or salmon, 15 minutes.
1/2 c fresh orange juice
2 Tbsp fresh lime juice
2 Tbsp chopped fresh rosemary
1 Tbsp minced garlic
1 Tbsp honey
1 Tbsp olive oil
Whisk together all ingredients and 1/4 tsp each salt and pepper in dish. (Makes 3/4 cup.)

While the chicken was grilling, I reduced the remainder of the marinade.
