Cooked beet greens last week,

after friend bought them from friends, so bought beets + greens tonight at grocery store, so I could cook greens again.

Have never cooked fresh beets, and would like to do so tomorrow, and serve with greens (and fish.)

Suggestions?

Are they small or large beets (difference in cooking time and especially whether to peel after cooking or not)

wrap the beets in foil, after drizzling with olive oil, a few grinds of black pepper, some salt, and rosemary - bake at 350 for an hour.

Wash and chop the greens (including the stems) - put some olive oil in a pan, add some chopped garlic and ginger and hot pepper flakes - add the beet greens, salt and pepper, wilt (stir for 5 minutes or so) - time it so that the roasted beets, beet greens and your fish is done at the same time.

We made the beets and greens like this and served them together over rice with toasted walnuts and dollops of goat cheese for dinner last week!

Thanks. That's how I made the greens (after blanching them,) and thought I'd do the same again. I look forward to trying the beets! I do like them in salads, and 'grew up' eating borscht!

Lay on some fresh argula. DONE

Love greens - cook them a lot. I like them just lightly sauteed w/ olive oil and pepper. If you're into bacon - some bacon bits sprinkled on top. Done.

4. Here is one of my favorite beet recipes

Bought some beets at the farmer's market yesterday and will be making recipe below. I'm not fond of beet greens so unfortunately they go to waste.

Grated Beets with Shallots

3 T olive oil
½ teaspoon whole brown or yellow mustard seeds
2 large shallots, peeled and cut into fine slivers
1 fresh hot green chile, cut crosswise on a sharp diagonal into thin slices
1 pound beets, peeled and coarsely grated
1 teaspoon salt
1 T fresh lemon juice

Put the oil in a wide pan or a large frying pan and set over medium-high heat. When hot, put in the mustard seeds. As soon as the mustard seeds begin to pop, a matter of seconds put in the shallots and green chili. Stir and fry for 30 seconds. The shallots should turn a little brown. Now put in the beets and stir for a minute. Put in the salt and ½ cup of water. Bring to a boil. Cover, turn the heat to low, and cook gently for 10 minutes. Uncover, turn the heat up to medium, and add the lemon juice. Stir to mix and turn off the heat.
