Eggplant rollatini. It's a Mollie Katzen recipe that calls for stuffing with pot cheese (I'm going to use ricotta instead). It has mushroom-tahini sauce to go over it.
I note that I've made this recipe twice in the past and rated it as only a six before, so I think I will halve it and do some experimenting. I am a lot more adventurous as a cook now than I was in '86 and '06, the dates I last made it.

p.s. if anyone's in the mood for a good cold soup recipe, I made one up using the guide in elleng's "Summer Cooking Toolkit" thread. It uses the zucchini juice that is a side product of making zucchini pizza crust.

(146,218 posts)We had a pasta with garlic, red pepper and olive oil, then a salad with tuna. We had a few cookies and some watermelon for dessert.
All of this washed down with wine, then a coffee with grappa.
I am just now waking up from my nap, which took place during a huge thunderstorm.
Does life get any better?

(2,016 posts)Lettuce, tomato, hot sauce and sour cream. I like adding serranos to the seasoned ground beef while it is cooking.
I anticipate yummy sauce dripping down my forearms.

So basically it's the home version of all you can eat salad and bread sticks from that place that shall not be named.

I do agree, I like 'big salad night' for dinner. It usually is when I'm in the mood for chick peas. So you have a protein, after that, pile on the veggies, and some dressing. (Note: I do like toasted bread cubes on my big salad.)

(88,117 posts)Lots of garlic taste. It is really delicious. I have not tried the other types they offer, only the Mojo. Absolutely delicious. Hot the first day, love it sliced cold the 2nd day. Then maybe sandwiches.
