I am do a volunteer stint this week at the homeless shelter here in Santa Fe, and I'll be cooking or fixing something almost every single night, as well as serving the food. Today I made Sheila's Sweet and Crispy Slaw. Here's the recipe:
Sweet Coleslaw
Ingredients
1 medium head cabbage, shredded
1 large carrot, shredded
1 medium yellow pepper, chopped
1 medium sweet red pepper, chopped
1 medium green pepper chopped
1 apple peeled and chopped
raisins
Celery seed
Ground black pepper
DRESSING:
½ cup half and half
1/2 cup mayonnaise
1/2 cup sugar
2 tablespoons lemon juice
1 tablespoon vinegar
Directions
1. In a large bowl, combine the first seven ingredients. Generously add celery seed and ground pepper. Combine dressing ingredients until smooth. Pour over vegetables; toss to coat. Cover and refrigerate overnight. Stir before serving.
I doubled that recipe, and didn't put in raisins this time. You could, of course, use actual celery instead of celery seed, but I use so very little celery, mainly because I cannot stand the texture when it's cooked, that I rarely buy the real thing. I got this off the internet a while back, and there are some minor modifications, although I couldn't tell you exactly what I changed. Oh, and if you want, you could add some sort of unsalted seeds.

I'm on a roasted (shelled) pumpkin seed kick.

(23,156 posts)that it can survive lots of adaptions. Lots of people don't like raisins, so I don't generally put them in. And if you like just a little more bite to it, put it a very small amount of chopped red onion.
I can report that it was all eaten and got rave reviews.
