Mexican Pizza

Ingredients
1 pound chorizo
3/4 pound Mexican queso
1/2 green pepper, chopped
1 onion, chopped
1/2 cup green olives, sliced
2 tomatoes, thinly sliced
1 c pizza sauce
Pizza dough

Directions
In a large pan, brown the chorizo, chopping it onto small pieces and draining the fat. In another pan, brown the onion in a bit of olive oil. Roll out the dough on a pizza pan. Coat with pizza sauce, then top with aren pepper, olives, chorizo, onions and then top with the shredded queso. Place the tomato slices on top of the cheese and bake in a 375° oven for around 45 minutes until golden brown.

Get thee a Pizza stone. My oven goes to 550. I pre heat the oven with the pizza stone, use a peel to transfer the pie directly onto the stone. 7 1/2 to 8 minutes is all it takes.

The problem is I use Trader Joe's dough and it's pretty thin. And I tend to put a lot of toppings on my pizzas. So if I tried to slide it off a pizza peel it would be a total disaster.

What I'd do is brown some loose Italian sausage. And I'd fry some chopped green pepper and onion. Then fill a taco shell with the meat, green pepper/onion mixture, and top it with tomatoes and provolone cheese.
