(although that might just be the last 2 weeks of political spin). Tonight we are having black beans and rice.
With cornbread. Also a slaw which I came upon after googling "spicy cabbage slaw." It is a Mexican cabbage slaw called Curtido and I had all the ingredients on hand. I made it around noon (had to double the amount of dressing in the recipe) and it has been marinating since then. I just tasted it and gave it a "perfecto."

Made from the leftover roast chicken from the other day. Hubby also made deviled eggs today. I'll probably have one or two as a snack later!

4. Carrot waffles

1 C flour
1 T raw sugar
1/4 tsp baking powder
1/2 C fresh carrot juice
2 eggs lightly beaten
2 T melted butter
1/2 C carrot pulp (optional)

Mix dry ingredients. In a separate bowl combine carrot juice, eggs and melted butter.
Add wet ingredients to the dry mixture and whisk together until flour is incorporated.
Add carrot pulp; batter will be a bit lumpy. Heat waffle iron.

Pour enough batter into each waffle form to nearly fill all squares. Cool until the outside of the
waffle feels crisp.

Makes 4 large waffles.
