It's a good day for soup here - raining hard, thunder, lightening and temps in the 30's! In February!! In western PA.

(163,986 posts)I just made some curried lentils and rice that didn't last into leftovers. Mom loves lentils and I'm currently having an affair with curry.

(135,060 posts)I added some smoked ham shanks so didn't do the rue. I removed most of the fat from the shanks and simmered in some water. Used the water to add to the lentils. Also added fresh spinach, minced garlic and cilantro. Had another bowl today with grated parm for lunch and going to have a cup with my dinner. Oh yeah and I diced the onions.

1 lb. bag lentils
water
3 celery tops
2 medium onions
2 carrots, cut into 3" pieces
water
salt and pepper to taste
2 T. butter
2 T. flour
1 c. water
Sort and rinse the lentils. Place in soup pot and add water (I don't know how much ). Add celery tops and onions. Bring to boil and simmer for one hour. Add the carrots and salt and pepper to taste and simmer until carrots are tender.
Make a roux of the butter and flour. Add the water and stir until smooth. Pour into the lentil soup and stir. Cook for a few minutes more.
This is the way my Mother and Grandmothers always made lentil soup. I've tried several different recipes, but always return to this one. My husband and I like to eat the whole onions, but I guess you could chop them up and the carrots too and it wouldn't change the taste at all.

(24,146 posts)it's the top chef finale tonight, so i'm having dinner with my dad and sister and want to do a nice dinner.
i'm craving roast, but my sister isn't too big on red meat, i'm hoping i can talk her into it. if not, maybe a soup or a baked chicken.
i really hope my sister will go for the roast, tho. i really want leftovers for sandwiches

I don't have prosciutto, but I do have bacon, so I am going to try it.
And some sauteed spinach on the side, before it goes completely bad.

(16,334 posts)I picked up the frog legs and mahi to go and le spouse will fix the tilapia later. I don't think the teens have ever had frog legs so they will find it funny for leap day/leap year.
I have a meeting & one kid has a meeting so we'll squeeze in dinner somewhere, probably at different times for whoever is home at the time.

I didn't want to cook them myself so I bought them from a restaurant. The choices were fried or sauteed and I picked fried.
I think the actifry would be perfect!

(10,153 posts)A few weeks ago we got some pork ribs that, after brining, rubbing with a garlic powder/salt/sugar/ground chile mixture, and braising turned out to be tough and not particularly tasty. But there were a lot leftover, so I cut the meat off the rest, cooked the bones and the cartiligenous bits to make a stock. I cooked some kidney beans in the strained, de-fatted stock. Then I sauteed an onion, whatever chiles I had on hand (two pasillas and a poblano, IIRC), added a liberal amount of cumin, some bay leaves, a can of diced tomatoes, the beans with their cooking liquid and the leftover meat and let the mess cook slowly for several hours, adding more stock to keep it the right consistency. Just before freezing it I added some liquid from a jar of home-made pickled jalapenos. I'm down to my last batch And since it was somewhat an accident I'll never be able to reproduce it! Or at least not easily.

(163,986 posts)Broiled crispy for Mom and fried for me. Asparagus was on sale yesterday (yay) so we'll have some with parm as a side along with a lower fat potato salad (olive oil not mayo, with spice taking up the slack).

(163,986 posts)it's really easy to get under the skin with seasoning. In Mom's half I worked in orange zest, thyme, pepper and kosher salt. Sprinkled with OJ and OO and let it sit for about an hour in the frig while my half was setting up with the Cordelia Knott's batter.
Meanwhile, I put up a jalapeno potato salad with cumin, celery salt, chopped cilantro, green onions, a pinch of oregano, olives, a coupla hard boiled eggs, a few pickled jalapenos and the sliced pickled carrots that come in the can, pepper, cayenne, some chopped celery.
The asparagus is waiting in the steamer for the chicken to be done.
You guys have made me much more adventurous than I used to be, that's for sure.
