Searching for a vegetarian recipe for a dinner party

Hello everyone,

next month it is my b.day and I am inviting friends over for dinner. I want to make a vegetarian menu. I do have recipes for the appettizer and the desert already. Now I am searching for a main course which is a little bit out of the ordinary but also can be prepared in advance.

Any ideas?

2. Somewhat
mainly what I mean is, I don't want to serve pasta or rice with veggies. I want to serve something one doesn't eat daily.

its easy - make-ahead - and feeds many...
and it can be loaded with wonderful veggies.

6. I saw a wonderful stuffed red pepper recipe

on the cooking channel a day or so ago. Red bell peppers stuffed with eggplant.

They halved and cleaned out large red bell peppers, Halve the eggplants and roast cut side down in the oven to get soft. When the eggplants are roasted, take them out of the oven to cool a little. Scoop out the flesh and stuff the red pepper halves.

I'll see if I can find the recipe. It was on cooking channel, I believe.

edit: Couldn't find it, but here is a version. You can leave out the anchovies of course.

8. I go to two dishes...
...one is spanikopita, the other is Emeril's savory bread pudding made with spinach, loads of cheese and artichokes. It's delicious.

If you went with spanikopita you could serve grape leaves too, and a greek salad and good breads and a mezze platter with greek cheese and stuff.

Depends on how much you want to cook, also.

but unfortunately that dish won't make it on the table. My brother will be coming too and he hates mushrooms. But thank you for the recipe.

14. My sister is a mushroom-hater too.
If we didn't look a good deal alike, I'd swear we weren't related. Seems I got ALL the fungus-loving genes because mushrooms are one of my favorite things.
