Great salad recipe!
I think Will and some of his friends are coming up here next weekend and I'm trying to plan food that is easy and good. Here is a salad recipe that I have made many times and it has been a real hit. You can make it in advance and it lasts for days and gets better with time.

Salad Ingredients:
1 head of iceberg lettuce
1 bag of spinach
1 bunch of scallions
1 pint of cherry tomatoes
1 package of frozen petite peas
1 pound of bacon (cooked)
1-2 cups of freshly grated parmesan cheese

Dressing Ingredients (to be mixed):
1 cup of mayo
1/2 cup of sour cream
1/2 tbsp of oregano
1/2 tbsp of basil
2 tbsps of lemon juice

24 hours in advance:

Layer in a casserole dish as follows:

lettuce and spinach
peas
tomatoes
bacon (cooked!)
dressing
cheese
scallions

When you are ready to serve, take what you need out of the casserole dish and toss. But the rest back in the frig for later.

PLEASE NOTE: for some reason, unknown to me, the order of the layering is important and the 24 hours in advance is important. ENJOY! :hi:

4. It's going to be artery busting, comfort food all the way!
My famous lasagna...made with cottage cheese, cream cheese and sour cream...a cheese/tomato pie...I'm trying to avoid the temptation to make mac and cheese! All of these are easy to make in advance and then, I can have some fun.

6. Ha! I have been told
that people have made this salad without cooking the bacon...very literal people. So I thought I'd be careful and make that little fact very clear. But, go ahead, try it and enjoy the enzymes! :-)

is the best there is.

12. Well I took your advice
and made it for a potluck tonight. now everybody's sick and they blame ME, even though I told them "it's Raven's fault" they're like "what the fuck is a Raven?" and still blame me those bastards. it's actually your fault and their own damn fault cuz they just couldn't handle all those yummy ENZYMES.

Thanks for ruinin- I mean - the recipe.

10. The layering is important to get the lettuce soaked
and the 24 hours is important to get all the flavors to congeal...It is a great salad...I've made it before :thumbsup:
