11. That's why I like Alton Brown

He doesn't do fads. He uses butter and notes that it's better for you than margarine, which is true. I was also happy to hear him say that salt is not bad for you as long as you don't have hypertension. He basically said you can eat all the salt you want as long as you drink water.

I also like cooks who realize that fat is an essential ingredient. Moderation is the key.
