1. Pork with a dry rub - no sauce
Sauces are for covering up mistakes. I cook ribs for about 6 hours over a hickory smoke and they taste great!

You can always add sauce after it's cooked

3. Maybe I've just never found the right dry rub.
I have always preferred slow cooking for 5-6 hours, then adding a little sauce and barely searing it on at the end of the cooking time.

But you can buy "Boston dry rub".

We slow cook pork shoulders, for at least 12 hours... to the point were you have to shovel them off the grill. I do them twice a year for a fundraiser, and we cook over a ton of pork. Takes about 16 hours with set up and clean up, but it is well worth it. We also sell homemade BBQ sauce... it doesn't need it though.

We use Apple, as our smoke for the last few hours...

I use this recipe with slight variations. The biggest difference is that I don't use any sauce at the end (just my preference). When cooking, I'll put the ribs in my smoker (Weber Smokie Mountain) for 3 hours, then wrap them in aluminum foil with a little apple juice for about 1-2 hours, then I unwrap them and reseason, and continue to cook for another 30-60 minutes. Wrapping the ribs in foil gives you the falling off the bone texture that I like.

17. KC MASTERPIECE IS OWNED BY CLOROX. I live in KC and when
people come into town and want to eat at the KC Masterpiece restaurant, I patiently explain that is similar to going to Maine and wanting to eat at Red Lobster. KC Masterpiece isn't anywhere on the radar of good bbq in KC.

Having said that, I do kind of like that sauce for grilling chicken because it sticks really well. Sounds like sweeter BBQ too...I think Masterpiece has some kind of molasses.

Anyway, for great bbq i must recommend www.jackstackbbq.com

You can order online and it's awesome! I ship to my dad and grandpa at least twice a year.

Nice butter sauce with some spices!

It resembles NOTHING of regular BBQ (oven cooked, no BBQ sauce, etc.), but it is still the best.

As for ribs, I prefer a good peprika rub on smoked pork baby back rips.
