6. Well, you open the WAV file in iTunes...

You set the "Import Using" in the preferences panel to MP-3 and then use the Convert function in the Advanced menu on the WAV file... You set it to WAV to convert back to WAV.

and WinLAME. Once you install both programs, you can go into the compression options in EAC and specify WinLAME as your compressor. Both free.
