Tell me, what herbs and spices to I put in a bottle of olive oil?

A little Basil and some oregano....

But those small hot tamale type peppers is OK.

I say yes to the basil and oregano.

4. Rosemary; thyme;

but remember if rosemary it will have that flavor strongly. Best to do one herb per bottle; or if combining; do as you would to flavor a dish (only combine those herbs that "go" together. Tarragon is good also by itself; as is basil. Almost any of these with garlic is fine; too.
