Cookies: The insidious mysteries revealed

1 c pastry flour
1/2 c sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 c brown sugar

Mix together into a nice powder, then add:
1/2 c butter

Mix some more until you have a nice granular substance, then add:

1 egg
1/2 tsp vanilla extract

Then for oatmeal cookies add about 3/4 c of oatmeal.
For Peanut Butter cookies add about 1/2 c or so of PB instead.
Or for Chocolate Chip cookies, put in about 3/4 c or so of chocolate chips.
