Poll question: Julia Child or Emeril?
Now to try to sway you:

Julia Child: Expert chef on PBS where you volunteer to pay if you like 'em that much.

Emeril: Seen only on haughty-taughty cable, where you pay $50/month and get a ton of commercials anyway.

Julia Child: Never bothered to sell her name on plain, unembellished foodstuffs.

Emeril: Like a true whore, sells out his name for every ounce of slop.

Julia Child:

Would never go on Wheel of Fortune to guess the round "before and after" where the puzzle spelled out "Steve Guttenburg Bible".

Emeril:

Would go on any trendy or pop culture trash show if they paid him enough.

1. Julia, Julia, Julia!!!!
A traditional chef and actually a sweet lady in person..she did an event at a local restaurant here a couple years back and was a joy to meet.

The printed version of her recipes is ALWAYS accurate unlike Emeril's

BTW...on the cooking thing since you are interested in "healthy fare" ..a friend gave me a book a few years back with some wonderful lo-cal and TASTY recipes.. It is Oprah's book "Cooking with Rosie"

I believe it is still in print and has some really great recipes...oh and a little hint on the cast iron pans...make SURE you season them if you haven't already..I think we discussed that..AND watch your heat!! Things can burn easily..it s BEST to get the pan hot...then turn the heat DOWN til you know for sure you aren't cooking too fast. I think you said you were in NC..so I know you have some good fish nearby, especially shell fish..real good for cooking healthy..enjoy and feel free to PM me if you ever want any advice.

Also DO visit Lindacooks sites..she has great advice on them

24. I've been getting
the Lindacooks emails...I'm already dying to try breads, but I think that might be a bit of a leap for a beginner.

As far as the *adjusting of the heat so as to not incinerate things* in the pans...well, lets just say I've figured that one out the hard way already...:eyes:

I can't wait to get my Julia book, I've been holding off trying anything really worthwhile until I get it, but I'm still interested in cooking after what...5 or 6 days? That in and of itself is a good sign. :D

And thanks for the advice, I'll put the Oprah book on my list of books to get. (Joy of Cooking is next, though. ;))

Emeril comes across as the exact stereotype of the obnoxious, pushy, American. I really like Americans, but there's some that just rub me the wrong way. Emeril I really, really, don't like.

own the Food Network, no question. Oh, and I can't forget Martin Yan. That guy cracks me up.

Emeril sucks, both as a cook and an entertainer. I can't stand him.

Julia Childs was great, but I'm not a huge fan of French cooking methods. She was the pioneer of the genre, so she certainly gets respect for that.

No one will ever beat her for integrity and quality. She takes no endorsements whatsoever. Ever. She tests all her recipes over and over and over. She teaches about food and why it behaves the way it does -- not just giving recipes. If you follow her instructions faithfully, you'll create something wonderful.

Emeril is entertaining but nowhere near as good as Julia (who's also pretty entertaining).

22. The real difference between Julia and Emeril
Julia Child introduced America to techniques for cooking fine French cuisine using only the best ingredients.

Emeril Lagasse taught America that if you make a damn fool out of yourself, you can create dishes that are one step up from Chef Boy Ar Dee and people will knock themselves out to eat them.

Besides, his fuckin' Emerilware pans are overpriced crap. Give me Revere Ware or Calphalon (preference to Revere Ware--I just love using uncoated pans) any day.

(EVERY Julia Child recipe I remember contains at least 1 stick of real butter!)

Seriously, Ms Julia is one of my very few heroes. When she once dropped a chicken on live TV, she picked it up, brushed it off, and said, conspiratorially "Remember, you're the only one in the kitchen!"
