3. Leftovers from last night

I was inspired by a video game (Vagrant Story) to make a chicken recipe. I'm as big a food geek as I am a gaming geek and I got to thinking about the polyglot culture the game takes place in, and came up with what I like to call Chicken Kildea, named after the mysterious ancient culture in the game.

Marinate boneless/skinless chicken breasts in a mixture of olive oil, soy sauce, minced garlic, honey, dijon mustard and a pinch of cinnamon. I usually bake it in the oven at 350 for 20 minutes but last night I tried it in my new George Foreman grill and it was even better.

Serve with couscous over a bed of baby spinach. :)

7. Frozen dinners

I'm not hungry and we're out of left overs. Tomorrow night or maybe Sat, depending, I'm getting some salmon from the store and some of their salads.
Edit to add: your chicken looks delish. Our supermarket makes great fried chicken. When spring comes (and I'm ready) we'll get some chicken and sides, take the doggie and go have a picnic in Palo Duro Canyon.
