2. Not necessarily for X-mas, but absolute hillbilly goodness
(because my hillbilly grandma taught me how to make them)

No Bake Chocolate Peanut Butter Oatmeal Cookies

2 cups sugar
1/2 cup cocoa
1/4 lb. unsalted butter
1/2 cup milk
1/2 cup peanut butter
1/2 tsp. salt
1 Tbs. vanilla extract
3 cups quick oatmeal

Combine first 6 ingredients in a large heavy saucepan over medium high heat. Bring to a soft boil. Remove from heat. Stir in vanilla, then oats. Drop by tablespoonfuls on waxed paper and let harden.

11. The base is, I think, cookie crumbs, coconut, and occasionally nuts of some sort...
Then a delicious custard, topped with chocolate. They are amazing.

No Bake Peanut butter Chocolate Oat Cookies

Ingredients (use vegan versions):

1/2 cup margarine (Earth Balance)
2 cups sugar (white or brown)
1/2 cup soy milk
4 tablespoon unsweetened cocoa powder
1/2 cup peanut butter
1/2 teaspoon vanilla extract
3 cups quick cooking oats

Directions:

I like to make this recipe when I want something sweet in a hurry. Vegans and non-vegans alike love these!

1. In a large pot, bring margarine, sugar, milk and cocoa to a boil. Stirring constantly, let boil for 1-2 minutes until mixture is completely melted. Do not over boil.

2. Take mixture off heat and stir in peanut butter and vanilla until completely melted. Stir in oats.

3. Drop teaspoonfuls of the mixture onto cookie sheets lined with wax or parchment paper and allow to cool. When cool, turn cookies over to dry the bottoms.

4. Store in an airtight plastic container in the refrigerator.

Enjoy!

10. No-bake? They're called "cookies" because they are cooked.
I have never heard of a no-bake cookie unless you mean some kind of microwave variety.

20. Butterscotch/ Peanut butter/ Chow mein noodle icebox cookies
Combine butterscotch chips and peanut butter in top half of double boiler until melted and mixed.
Stir in chow mein noodles.
Spoon blobs on wax paper.
Stick in freezer until solid.
Pull out of freezer and munch!
Yummy!
