Anybody here ever make grilled Eggplant Parmesan?

I found some recipes. But I think baked would be better. Heating up the house, further, by baking just seems stupid though.

1. I've used a grill pan...
and then transferred to the oven. It' great. I like the grill marks and the char-ness (sp?)

3. Remember to slice the eggplant, salt it and absorb the salt with paper towels overnight.
Then you rinse the eggplant slices off the next day and cook with them. Makes it less bitter. Or so I was told by a girl in a grocery store check out line years ago.

6. I've sweated eggplant with salt in far less time than overnight
and had it turn out fine.

11. Male eggplants aren't as seedy, thus they weigh less and aren't as bitter as the female eggplant

7. Thanks! I had to think about what C&B was...
I didn't even know DU had a Cooking and Baking group!

Found the thread, and bookmarked it. Now I want to make veggie lasagna out of eggplant! That could either turn out really good or "interesting" (as my husband often describes my cooking).

9. not parmesan, but yummy
slice long ways quite thin (less than 1/4 inch?) brush lightly with olive oil and sprinkle liberally with salt pepper and oregano.

Grill till thinest parts are crispy and even burnt. Eat hot off the grill with cold sour cream or tzaziki.
