Remember when you asked for sausage on a Pizza you got real sausage
a glob complete with visible fennel so you knew you was eating the real thing.

And it added that special kind of goop to the whole pie, gave it that unique taste, a little bit of Italy in your mouth.

Now, all the pizza places are putting what looks like hamster turds on their pies. It doesn't taste like sausage, it doesn't look like sausage, it's just some kind of meat that is suppose to make you think it is sausage.

I blame Pizza Hut and Domino's for homogenizing Pizza.

When I grew up anyone who could afford a Pizza oven had a shot at making it if he had a good store front and a good pie to offer.

Now, Forget about it.

As far as I can see there are about three, four self owned and run Pizza Joints on my side of Cleveland.

The rest, never mind, they "design" their pizzas.

I'm not saying there ain't a place for them ipsy pispy goat cheese joint, hey to each his own, but just a good slice is hard to find around here anymore.

Even the local one that I really liked got the franchise bug and now there are twelve of them scattered around the city. And they have changed their product. They were, back in the late '90's, voted the best Pizza in the Mid West. Now, well, they would be lucky to make the cut to even compete.

I know I sound like a grumpy old man, but hey, I'm just tellin' the kids that there once was this great food called Pizza...

What's so wrong with that?

1. It's the main reason I don't order "sausage"
anymore.

Those little pellets reminded me too much of pet food, or the other by product. :puke:

Even the place we frequent is part of a chain...

It's pretty good pizza, though, still...

NO goat cheese, either.

We haven't had it in a while, but I do believe the sausage IS just that: sausage.

AND they deliver!

How good is that?

It's only the chain pizza places that use that crap, and who would buy pizza from them with 7 real pizza places within 10 minutes of me? Not I. :)

breakfast sausage shouldn't be on there, Italian sausage? yes

10. When you get too large in the restaurant biz, it's difficult to keep
control over the quality of ingredients as you have to rely on food service companies to keep you supplied, and their product lines can be quite homogenized.


Having said that, making your own bulk Italian sausage is fairly easy to accomplish. A twenty-five pound batch takes no time at all to whip up.

I agree about Romeos; they used to make a better product than currently, but it's still not too bad.

I don't eat the stuff often, but I like having sausage on pizza. The last time I indulged, the sausage pieces were very small. They're undoubtedly cutting back on the amount of sausage that they use.

Pizza in general doesn't taste as good as it did before. Is that my age or what?

18. Mass-market "Italian" sausage is an abomination nowadays
The only varieties available at the local Hanneford (a) lack fennel seed and (b) are full of paprika, of all things! They add the paprika to make it look red and therefore "hot" and they fail to use fennel seed because they simply don't know how to make real Italian sausage. I make my own from ground pork, garlic, ground red pepper and plenty of fennel seed.

21. You need to come to NJ, where REAL sausage is used
and they make pizza the old fashioned way. Where I live, three pizza places, where I work, FIVE, both small towns. Enough biznezz for everyone.

25. That's the problem here in Cleveland...
Only two, three places anywhere near me that have good quality pizza anymore...

I use to work at a shop that made custom rotary pizza ovens. We had pizza all the time.

31. I had some great Pizza in Salem, OR about thirty years ago....
Never made it up the coast.

Cleveland has a Little Italy with pretty authentic food but it's across town and I don't get over there all that often so when I do I grab some Lasagna or Pasta...
