What should I do with them? I was thinking something sweet and easy for tonight. The custard is for tomorrow night.

If I have just one or two egg white (or yolk for that matter) leftover, I usually just nuke them and then give them to the dogs. But five is a lot. Seems like I should be able to do something with that.

1. Macaroons or even some meringue cookies

For Macaroons,Whip em and Mix them with some coconut and sweetened condensed milk.

For Meringue, whip em stiff with some sugar and vanilla and cook in a slow oven until crisp.

3. Meringues! You can make Floating Islands with them.

Make several meringues--if your area is not currently humid, as humid weather is not meringue weather. While they are "drying" in the oven, make a simple custard. Throw it into a bowl and arrange the meringues on it. Decadence says add whipped cream to the top of the meringues.

4. Dang, do you always cook, wildeyed?
Seems like you're always whipping up some lil wonder. Is this normal, or just a holiday gene in ya?

5. I didn't get to cook AT ALL this holiday season.
We went out of town to a weird potluck thing at Thanksgiving to please my MIL. Then at Xmas, we went to visit my parents, my ailing grandma and my in-laws again. In addition to not cooking, no one else made much of anything worth eating. My family is too blitzed from dealing with my grandmother and my in-laws just don't care.

Anyhoo, I am making up for lost time. After this weekend I am planning to begin renovation of a bathroom, so I prolly won't have much time to cook later, either. :(
