Need vegetarian crockpot recipes
I've been enjoying my crockpot, having made roasts, chicken, etc.

But my boyfriend doesn't eat meat, and he's getting jealous. He's also not a big bean fan.

So... Any ideas on something tasty to make in a crockpot for him? He does eat some seafood, but that doesn't seem likely for a crockpot. Thanks!

1. soups and stews are the obvious thing
maybe some types of casseroles - somebody mentioned enchilada type dishes somewhere on this forum...

Just cook it on low.

Throw lots of garlic, sauteed onions (you need to get them golden in a pan before you throw in the crock pot), chunks of zucchini and eggplant, a few cut up peppers (Red and green), a can of tomatoes (I only use half of the liquid from the can as I like this on the dryer side. You can also add red pepper flakes and of course salt and pepper.

6. I usually serve it as a side dish.
But it's great over Couscous or Polenta. If you want a hardier dish it's great with TVP.

9. Textured Vegetable Protein
Soy based fake meat ..... I say that somewhat disdainfully. TVP got a bad rep when it was added to all manner of commercially prepared ground beef based products. Its origins are in the vegetarian world and its an okay ingredient.

My wife eats ratatouille as a main course over some starch .... rice, cous (she only gets one cous ..... I get the other) even pasta.

10. It's a habit I developed from my veggie days
I don't mind the TVP so I do add it to most of my stews in place of meat or to stretch meat in things like sloppy joes. The family doesn't know the difference...and it's my way of reducing our animal protein consumption.

I know because I've seen it on the shelves. I haven't looked through it so I can't vouch for any of the recipes, but I'll bet Amazon has it.

Searching "Vegetarian Crock Pot" on Google should net you a few, too.

Does he like meat substitutes? I have in the past made crockpot recipes with some substitutes that turned out pretty good (even my non-veg friends really liked some of 'em). I used to take a non-veg recipe often and simply substitute the soy-based product. Sort of like they recommend here:

If you are in or near NYC, there is actually an awesome speciality store there for subs that I just recently discovered and am sharing with everyone -heh. They ship too.

Over the years, I have tried many substitutes (starting with Quorn/Morningstar etc.), and these I have to say are the best subs I have ever come across. They also don't have MSG and depending on the one you get can be quite healthy and protein-packed too.

My bf has been looking specifically for seafood-subs for a while and we tried their sauted eel yesterday and granted it has been a long time since either of us has tasted eel and individual tastes do vary (so take this with a grain of salt ;)), but to both of us it tasted incredibly like eel. All their other products we have tried have also been excellent.

8. eh, not so much
I don't know that he doesn't like them as much as just doesn't bother with them. He does eat a fair amount of tofu, though, and the occasional gardenburger. But no, he doesn't really go for the other stuff much.

I've seen him eat it in veggie restaurants - so maybe he's just too lazy to cook it himself.
