I read somewhere that you can cook sweet potato greens & I want to try
I have two vines that I started on the window sill, then moved outside still in their water pot.

Would it be okay to use their leaves? How much of the vine can be cooked? And most of all, how would you do it? I love the thought that I could take this remnant of a kid's project and actually eat it.

1. Sweet potatoes don't produce solanine
which is the poison contained in potato leaves and greened potatoes. The leaves should be OK to cook.

On closer examination, I turned up quite a few west African recipes for sweet potato greens. This one looks especially good: http://www.congocookbook.com/vegetable_and_side_dish_recipes/sweet_potato_greens_with_fish_and_shrimp.html

It's got everything I like: smoked fish, shrimp and chiles.

2. Ooooo, thanks. That looks good. I discovered that Pacific Islanders seem to use them too.
Now I must dive back into the swamp that is the post-debate GD:P

5. Green ones are.
They turn green due to exposure to the sun, not due to stage of ripening.

7. Just cut that end of the potato off
Some people are more sensitive to solanine than others, but it's not a good idea to eat it if you can possibly avoid it.

3. My DIL uses sweet potato leaves and vine tips in stir fries just as she would any other green.
She's really looking forward to starting a garden at their new house and this is one thing she really wants to grow. There are several Asian gardeners who sell veggies at our local farmers market and you can buy sweet potato vines there in bundles.
