Gosh darn, my husband's boss just gave us a beautiful 5 lb King Salmon filet
from a fish he caught himself. I have to serve this for Christmas dinner. I was thinking of baking it with a touch of lemon and dill and serving it with new potatoes cooked in their skins. Any comments or suggestions for other side dishes?

1. What a lovely windfall!
For myself, the only way I like it is smoked or marinated in a teriyaki and then poached in the marinade. I'm sure others will come up with some great ideas.

Enjoy it no matter how it's prepared. :hi:

2. Simple is best with a beautiful cut of Fish
My only additon to your lemon would be some Butter. I'm not a Dill fan so I'd leave that off myself but I know lots of folks love it with their salmon. A few years ago I had a lovely Salmon fillet roasted over a simple rack made of bruised lemon grass. It was seasoned with a simple squirt of fresh lemon and some soy. It was finished with sliced scallions and a pouring of hot oil to frizzle the greens. It was delicious.

4. Lemon and soy, yum
I like it with dill too, but my husband has recently started preparing it more with the splash of soy. A Japanese friend taught him that trick and he loves it.

5. Asparagus
of any kind. That's what we usually fix with salmon and roasted new potatoes. I am jealous jealous. Husband couldn't fish this year and I haven't got to have any salmon. :cry:

6. OH- Thank you - I was trying to think of vegetables last night and totally
forgot asparagus! Usually I only buy it in the spring, but recently I found a brand of frozen organic asparagus that's fantastic! I need a lot of vegetables for the vegetarian kid.

I was also thinking of adding wild rice and some brussels sprouts.

But thought that might be too much starch. Then again, it is Christmas We have wild rice with salmon a lot. Brussel sprouts sounds good too. I guess I usually have salmon at a time of year when asparagus is in because I've never bought frozen. I will have to look for it because we love asparagus. Somebody posted a kind of stove top grill with red potatoes and sweet potatoes. I've put packets on the grill with red potatoes, sweet potatoes, green beans and red onions. If you served wild rice, then maybe a grill of mixed potatoes would be good.
