5 lbs of Opakapaka
UPS delivered to me today. It was a Christmas gift from a famous author(my stepdaughter). Fresh Pink snapper from Hawaii. Can not wait to try it. Maybe it would be a proper thing to serve ourselves on Inauguration Day. Maybe I should email the President-elect and see if he can give me any tips on how to prepare it. :evilgrin:

1. If it's fresh eat some today and freeze the rest immediately
I love Snapper and like it cooked on a bed of shredded onions in the oven with generous peppering and some slices of lemon and butter. It's a bland fish which I like so it will pick up flavors of your seasonings quite well.

Snapper is also great cooked in Parchment packets in individual servings. This way everyone can have it with the spices they like.


For a quick Cioppino throw some spicey v-8 together with some sauteed onions, garlic and red peppers. Reduce and then throw in some snapper chunks with some clams and shrimp. Serve with Garlic Bread.
