Mmmm...... rice pudding.

Mmmm...... rice pudding.
I came home from work late, and Mr. kcass had fixed dinner - bless his little heart - ham steaks, a nice salad, and Zatarains rice.

I don't care for the taste of Zatarains, and my ankles don't do well with it, either. Something about nearly an entire day's allowance of sodium in one convenient serving. So I made brown rice. And I made more than I needed.

After everything was cleaned up, I made rice pudding. My kitchen still smells like cinnamon, and my teenage son thinks I'm a gourmet chef. Mmmm......

And more than one flavor?

We had low sodium Zatarain's jumbalaya tonight, with pork cutlets, garden summer squash with garlic and cheese. Yummy.

Oh, and I love rice pudding too. Can't eat it cuz of the carbs, tho. We all have trouble of one kind or another. :-)

3. OK, but there are lots of ways to make it...

my husband loves the one that cooks in a double boiler using lots of milk, white sugar, and taking an hour
on the other hand... I love the one made with just enough milk to cover the cooked rice, brown sugar and an egg

good thing we both love the vanilla and raisins ;)


Are there other methods we could argue over?

6. One of our family recipes is a stove top version that we serve as a breakfast cereal.
We call it Rice and Raisins (very imaginative, doncha think?).

I start by putting 1 part rice, 2 parts water and a handful of raisins in a pan with a little salt and cook it until the rice is tender. Then I add enough milk or half and half to it to make it kind of loose and soupy and remove from heat. Beat an egg (or two) with a little sugar and vanilla. Temper the egg with some of the hot rice then stir into the rest of the rice. We serve it with a little additional sugar, a dusting of cinnamon and milk or half and half.

I just made some in the pressure cooker using Brown Basmati Rice, Almond Milk, raisins, crushed almonds and agave nectar. It probably could have used a bit of a longer cook but it's still yummy
