An old country recipe for Veal Breast-lots of work-but good.
A very cheap piece of meat is a veal breast. It usually has a few ribs on it, but otherwise it has strips of lean with fat between and usually weighs about 4-5 pounds.
When the strips of fat are removed you have thin slabs of veal,
they are about as large as your palm and fingers.About 4 or 5 long slabs.
Try putting some stuffing inbetween layers of veal, anything you like, and then bread and sautee the roast, then put in the oven to bake - about 350 for a few hours. Never have you tasted such a tender and flavorful roast. I like Italian, so I spice up the stuffing with a lot of oregano, rosemary, basil, and especially garlic. We slice it like a jelly roll for the meal.
