Tons of Vegan options too. I cook with a lot of Indian flavors so it's great to see different things to use my spices with.

So what are you going to try first. I have some potatoes and cauliflower so I'm thinking of doing her aloo gobi. I have to see if I can get the Mango powder while I'm out today...I've never used it. :bounce: Her recipe is a little more sophisticated than my usual dump it all in approach so I'm excited to try.

2. I'm not sure yet! I've been specifically looking for lentil recipes lately
so maybe one of the dal recipes, but I really got excited about the possibilities with the Chola Tikki and the Aloo Naan. Chickpeas are another food I would like to add into my diet and the Tikkis could be varied in so many ways. And her preparation of the naan made me think about variables too!

Let me know what you think of the aloo gobi if you get to it before I do! I love cauliflower and am always looking for new ways to use it.

I'm also always looking for new ways to prepare them, and you just gave me a treasure trove of new recipes! Thank you! I have one of Mahdur Jaffrey's books, which has versions of many of these recipes in it, but there are way more on this site. I see chole palak on the menu soon. :-)

I could eat chick peas every day and never get sick of them! BTW, roasted chick peas are delicious and easy to make. They're like roasted nuts, and there are numerous recipes on the Net. Some are Indian-spiced, some Middle Eastern-spiced...

Love Manjula's instructional videos. I think I might try the kidney bean recipe. She uses a pressure cooker and cooks the beans in 12 minutes! (Wish I had a pressure cooker!)

5. I have always been terrified of them...my mother was a long time
pressure cooker user. Maybe one of these days I'll be brave. :)

I will probably adapt some of the recipes because I am not fond of some of the flavor profiles in some of the dishes (not a fan of bitter tastes for example) but the ideas and tips are really useful IMO.
