SACRAMENTO, Calif. -- Salmonella fears have prompted a Ripon-based company to issue a recall of its organic brown eggs.

1. I thought there was a risk of salmonella with all eggs, so I wonder why these eggs
seem a particular risk. The article does not give specifics.

2. the risk is that salmonella can not be detected in grading;

thus all eggs are treated as at risk. My guess would be that SE was found in some of the birds, putting all eggs from that flock at risk. This would happen if that flock showed a larger than normal mortality and the dead birds were tested and found to be positive for SE. That being the case the eggs would be recalled and the eggs from that flock would be diverted to pasteurization or destroyed. The fact that no one has become ill may be for many reasons , proper handling, sufficient cooking times or that sometimes even though the bird may be infected it may not pass into the egg. ON EDIT: This points out that even organic, cage free or free range birds are subject to SE. (The term "Natural" means nothing , as all food is natural.) SE is felt to be at greater risk in flocks with a denser population however cage free or free range birds that are free to eat their own droppings or pick up SE from the ground, can also become infected.

I actually have my own little flock of 5 hens and I always assume that they are salmonella free, but it's always good to be reminded that even small farm/organic eggs can be at risk.
