Pelosi laid out her rationale quite ably, and trying to paraphrase or interpret it would lose too much of her meaning. She wasn't talking about all Catholics, but using her own practice of Catholicism as the basis for her response.

I would, however, point out the practice of the media during the last three years (at least) to refrain from calling things Trump is lying about lies. They bend over backwards to make excuses, justifications, and rationalizations about how this or that lie isn't really a lie, because nobody knows what's truly in Trump's heart or brain, and so even though this statement or that statement has no basis in reality, Trump might think it's true, so the media can't say if it's really a lie. Yet Rosen can pose a question that posits a priori that Speaker Pelosi "hates" Trump, demonstrating that the media rules for Trump (you can't know what's in his heart) don't apply to Pelosi (you can assume she hates Trump), and paint her into a corner of the reporter's choosing before his question even gets asked.

I can understand why it set her off, and I suspect it comes back to the Sermon on the Mount.

“You have heard that it was said, ‘You shall love your neighbor and hate your enemy.’ But I say to you, Love your enemies and pray for those who persecute you, so that you may be sons of your Father who is in heaven."
