i wont demonize butter or sugar

as a lifetime line cook this made me laugh out loud
also note despite the headline he leaves on excellent terms with flotus and has been instrumental in developing many of her nutrition and obesity programs

"The chef called Michelle Obama “definitely an inspiring boss” and complimented her anti-junk-food campaign.

“She has done it with humor and good will, without preaching,” Yosses said about the first lady. “Just the way you would hope the ‘Mom in chief’ would do.”

I won't demonize butter and sugar either.

I mean, organic butter is far healthier than any of the alternatives out there. Especially if it is not salted.

Then sugar, I understand the switch to agave, but in general, if you crystallize that, it acts pretty similarly. I just avoid any of the manufactured sugar alternatives like sweet and low.

I laud the health crusade by Michelle Obama, since I support her push for diet and exercise.

However, this guy is a pastry chef dangit. He is using the natural ingredients of butter and sugar, and by gum, I support his use of those things to create his cakes and cookies. People don't have to eat it. Those things are supposed to be sweet.

It sounds like he just has been using less of it, or different forms of it, like fruit purees (for sugar).

Speaking of alternatives to sugar, coconut sugar is really good, too. I understand that it has a lower glycemic number than table sugar. It tastes somewhat like brown sugar.

I am generally not a fan of coconut products.

I mean, I love the fruit, and I would eat it fresh from the husk, but anything processed from the coconut, I don't know why, but to me it tastes wrong.

I will still check on it though.

alternatives to sugar these days. But I have to use butter and eggs, at least some of the time. I don't think I'd like to eat like the Obamas do. It's one thing to change recipes around to make them more healthy, but sometimes there is no substitute for certain ingredients if you want to make the dish taste right. How does one eat mashed potatoes without gravy, for instance, and how does one make gravy without butter?
