But this morning, I had started up my nationally famous home-made Chili con Carne with spiced medium-hot ranchero sauce, and we'll be having Northgate Market in-store made refried beans and tortillas, and catfish ceviche to go with it. I'll also have their house guacamole, that I add another avocado and a squeeze of lime to cut down some of the heat.
Tonight, it's just the two of us and a slightly sick five-year-old.
I'd do tamales - I used to make my own using a recipe a long time ago neighbor from Oaxaca taught me that includes crickets in red mole sauce with nopales - but I've developed an allergy to corn along with my allergy to shellfish in my old age, so no more tamales.
Our next-door neighbors are doing Cinco de Mayo with their relatives in Tecate, and for just two people, tamales can be a pain.

Unless it is my former step-son's made from scratch Serrano pepper salsa. Zowee!!!! The best I ever ate, and that includes New Mexican cuisine, which is saying a whole lot.

My favorite Mex meal was an enchilada served in a little town south of Santa Fe, smothered in molé. Zippie and absolutely delish! Washed it down with a Dos Equus. I was driving cross country and filling up at a gas station. It was evening and I was still an hour's drive or so from my motel reservation. There were two local cops paying for their gas at the same time as I was. I told them that I was driving from CA to MI and I absolutely had to eat dinner in NM, but didn't want to drive into Santa Fe. Anyway, I was sure that there'd be great New Mexican food right here. They knew exactly where to send me, and even drew me a map, since it was a bit off the path. It was one of the best meals of my life.

Like i said upthread, one of the few downsides about OR is, it gets harder to find spectacular mexican food the further north you go.

For a sit down meal, NM has the best Mex north of the border.

Tex-Mex is rubbish. CA is not much better.

The little taco trucks in Phoenix can be pretty damned good, though.

Where it was basically Tex-Mex. Still, some places did things better than others. My then wife and I would eat out Mexican regularly.

Her son made absolutely bomb salsa. From scratch. With Serranos imported from NM. And zowee! It was spicy. And absolutely delish!

I ate Mexican the day before. Little hole-in-the-wall diner run by immigrants. Doesn't look like much on the outside but the food is awesome.
