on a small farm out of Portland OR til they were just right, then slaughter a couple and bring them into the city to our big back yard. (That neighborhood is totally gentrified now.)

They'd do the whole thing of heating up big tin tubs of water and proceed to butcher them and divide the meat up to further process it according to use. They worked for hours and hours but I especially loved the cracklins we got that night

It's so funny to remember the images of hog parts hanging from our trees. Nothing and I mean nothing of those hogs went to waste. I can't think of a part of the hog that wasn't used. Our individual families were able to eat for months.

Nowadays if we tried that, someone would call the police!

It's one of the few low carb snacks out there, but whenever I've eaten them they were just too salty for me.
